Week In Review- 4/13/12

If you are new to my blog, welcome.  A little introduction...I am a Christian SAHM raising and home-educating 2 young boys.  I write about my experiences, what works and what doesn't.  I try to share helpful homeschooling resources/projects as well as the occasional recipe, life story, you get the drift.  I am participating in the Ultimate Blog Party 2012.  If you feel like checking it out, stop on by.

I did not post a review for last week so this is sort of a wrap up of the past two weeks.
I’ll begin with Easter.  I had so much planned…didn’t do much of it but it still turned out great.  We didn’t find the time to do the Resurrection Cookies this year, bummer.  The plan was to make them Saturday night and wake up to them on Easter but we had family over for dinner, and went to the Saturday night Easter service at church…Jeff ended up getting baptized (totally unplanned and exciting).  By the time we got home we were all tuckered out.  We didn’t get to the Easter poem either.  We did do the Resurrection eggs though.  I also made a delicious creamy lemon pie.  I combined two recipes and added my own little touch and it turned out to be sooooo yummy and refreshing (and it’s super easy).  I thought I’d share it with you.  Be forewarned, the measurements on the crust aren’t exact as I did not measure them but you can make it to your liking.  I made mine gluten free but you can make yours with regular flour if you prefer.

Creamy Lemon Pie

Crust:
1/4 cup butter (softened)
1/2 cup gluten free all purpose flour (I used Pamela’s)
1/4 cup chopped walnuts

Preheat oven to 375 degrees.

Mix all ingredients until thoroughly combined (I did mine in the Ninja but you could use a food processor or even good old fashioned elbow grease).  Press dough into a pie pan making sure it goes up the sides a little (about 1/2 way or so).

Bake at 375 degrees until lightly browned, about 10 minutes or so.  Place in  refrigerator while preparing lemon filling.

Once crust is done, turn oven temperature down to 350 degrees.

Filling:
11 oz fat-free sweetened condensed milk
2 large eggs
1/2 cup fresh lemon juice
1 Tbsp lemon zest

Combine condensed milk and eggs in a medium bowl, mixing until smooth.  Add the lemon juice and zest and stir until incorporated.  Pour into prepared crust.

Bake for 15 minutes.  Cool completely. 

Slice fresh strawberries and place them on top.

Serve chilled…ENJOY.


Now, let’s get to the homeschool wrap-up. 

Math:
We completed Essential Math, Kindergarten Level B.  We’ve been in limbo for the last couple of weeks with math.  The plan is to move on to RightStart Mathematics Level A Lessons For Home Educators.  Some of it will be super easy review and some will be totally new.  The scope and sequence is completely different and the two math programs have a totally different approach.  I’m not sure how Evan will do with it.  It doesn’t use as many worksheets (Evan really enjoyed the worksheets w/Essential Math Kindergarten SET--Books A and B).  I hope to begin his RS math lessons either next week or the following week.  I still need to finish entering all of the lessons into my HST program.

Language Arts:  Spell to Write and Read
We worked mostly on the phonogram cards, seeing and saying them.

Developmental Skills:  Developing the Early Learner: Level 2
We did more worksheets than usual to take the place of the lack of math worksheets.
Lessons we did were: 
Auditory/ similarities (2 lessons), memory (2 lessons), and rhyme.
 Motor/hand-eye (2 lessons), and left-right.
Visual/similarities, and memory (2 lessons).
Comprehension/association (2 lessons), sequence (2 lessons), and language.

Bible:  I Can Study Jonah & Ruth Alone With God - King James Version (Alone With God Bible Studies)
We worked our way through the 2nd chapter of Ruth.

Character Building:  Child's Book of Character Building: Growing Up in God's World - At Home, at School, at Play, Book 1
We learned about forgiveness and fairness.


Other stuff:
We managed to make it to the park.  Oh, how we had fun.  We ran into some friends we made last year.  The kids enjoyed getting out.  There was a lot of outside play going on around our house.  The weather was so nice.

Evan’s soccer season starts this Saturday.  We received a call from the Parks and Rec dept. on Wednesday.  Apparently they “lost” Evan’s coach (not sure of the reason).  They asked us if we would do it and we said yes…so we  Jeff will be coaching this year and I will take care of all of the  communication/organizing stuff.

  2. Thank you so much for sharing this recipe! Lemon pie is one of my all-time favorites and I've never seen it with strawberries on top. I'm not sure how that has escaped me as it seems like the perfect flavor combination. So thank you, thank you!   4. I make the same pie with key lime juice, it makes a super simple Key Lime Pie, but I never thought of using lemon juice instead. Thanks for sharing!

  8. I love that you have bible and character building separate. I need to split that I think. I realize bible stories have character training, but it seems like it's not making a dent with my 9 yr old lately. =/
